Asparagus & French Onion Quiche

The idea behind my Simply Delicious page is to offer you fresh, easy, “everyday items in your pantry & garden” that you can use to create sustainable eating habits. Challenge yourself to cook for a week with whats left in your fridge! This method is actually how some of my favorite recipes have come to life!

Let’s be real.  There are times, I toss all notions out the window and order a pizza when we still have a drawer full of peppers in the fridge that are just dying to be diced.  But to live mindfully and make a greater attempt to be sustainable in your daily routine, will ultimately be a healthier lifestyle for you AND your wallet.

I’m a vegetarian, in the respect that I don’t eat meat or non-wild caught fish.  Only a few years ago, we made the decision to welcome a tiny flock of laying hens to our family and boy, did that change my life.  I will have to do a future post on them altogether; I can’t say enough about raising your own chickens.  Waking up and walking out to grab fresh eggs. Mmmm… you get the point!

On that note, for my very first Simply Delicious feature I wanted to open with a homemade recipe that family and friends alike have been egging me on to share!

Asparagus & French Onion Quiche


For The Crust:

2 Cups Flour

8 Tablespoons Butter, Cubed

1/4 Teaspoon Salt

3 Teaspoons Ice Water

1 Free Range Egg


For The Filling:

5 Free Range Eggs

1 1/2 Cup Fresh Asparagus

1/4 Cup Half & Half

1/2 Cup Milk

2/3 Cup French Fried Onions

1 Cup Cheddar

1 Cup Swiss

1 Tablespoon Cumin

1 Tablespoon Nutmeg

2 Teaspoons Ground Pepper

1/4 Teaspoon Salt



Start by making the crust. Mix flour with butter in medium mixing bowl. With a pastry knife (or fork) cut or mash the butter into the flour. Add salt and water as you mash. Continue to mix until dough is formed. Dust wood rolling pin with flour, then flatten dough on cold surface. Form into a nonstick pie pan. Lightly brush surface of crust with egg yolk. Set aside until you are ready to fill.

Preheat oven to 375 degrees.

Take 1/2 cup of cheddar and line the bottom of the pie crust. Chop asparagus into 1/2″ segments. Toss into a frying pan with all spices, cover and lightly steam in 1 tablespoon of water for approximately 8 minutes, stirring every few minutes. In large mixing bowl, crack 5 eggs and beat until smooth.  Add half & half, milk, remaining cheddar and Swiss cheeses.  Thoroughly mix. Once asparagus is steamed, add to bowl with French fried onions and mix again. Pour filling into a pie crust evenly and place in oven. Cook for 45 minutes.

*Optional: For a decorative touch, use cookie cutters on any remaining dough and add a few shapes to the top! Simply cut out, lightly brush with egg yolk and place on top of quiche within 15 minutes remaining cook time.

Ding! Time is up. Test quiche is thoroughly cooked by poking center with a toothpick.  Tooth pick should remove clean.  Let quiche sit for 8 minutes to cool before cutting.
